I came across a very fascinating Sourdough experiment and had to share it with you all.
I recently attended a Zoom talk on the ‘Science of Gardening with Nature’ organized by TIWLTwith Chris Wooding of Ironwood Organics as the speaker.
The 1-hour talk by Chris was packed with so much knowledge about the backyard ecosystem. He draws parallels from his practical farming experience to small-scale backyard growing and it’s absolutely mind-blowing to learn about these insights on growing food. The link to his talk is shared below.
He also shared his accidental (serendipitous almost) experiment when he was having difficulty with baking bread at his farmhouse during winters. His crazy experiment resulted in a Birch Bark wild yeast Sourdough that’s actually a cold-weather sourdough. A culture that becomes really really active during cold weather/ lower temps and seems to go into a slump during summers. The exact opposite of most sourdough cultures. SO FASCINATING, right?!
